

How The Adventure Began....
Nick's love for travel, surfing and sushi took him to Nagoya, Japan. He had returned to the USA from living in Khabarovsk, Russia as a United States Peace Corps Volunteer. He still wanted to travel, and his friend Dianne was leaving her teaching job and apartment in Nagoya. She asked him if he wanted to take her spot. Nick jumped at the opportunity, and moved to Nagoya for what was going to be 1 or 2 years. Well, Nick fell in love with Japan, its people, culture and food. He taught English, started his own English school, worked as a radio DJ and an actor, surfed, road mountain bikes, got married and started a family. He was living the life. Nick ate real ramen for the first time at Ippudo Ramen in Nagoya and instantly fell in love with everything about it. He would seek out ramen restaurants all around Japan wherever he went so he could taste the variations, watch the chefs, and learn all he could. He started forming the idea to create his own ramen food truck or restaurant in the USA one day. Nick moved back to Clearwater in 2007 with his three little boys as a single father after 9 years in Japan. As much as he wanted to open a food truck then, it was not the right decision at the time while trying to raise three little boys on his own. So, he took a job as a teacher in the Pinellas County School system and practiced his ramen recipes. NOW it is 2025, his boys have grown up and it is time to bring his delicious ramen to the rest of the community. いただきます!! Itadakemasu!!
